Happy Monday meal planners! Here in the US, this weekend is the unofficial beginning of summer. We are so fortunate to live in a small suburban community that honors those that made the ultimate sacrifice for our freedom, with a small-town parade and memorial service. It never fails, as the bagpipes start, and the color guard rounds the corner towards our house, I shed a few tears.
Hopefully the weather will get the hint that summer is on it's way and the rain will stop. I feel like this spring has been the rainiest EVER and I'm over it. I'm ready for the grill, yummy salads and fresh fruits and vegetables from local farms and orchards. My summer meal plan is to mostly grill lean meats, fish and shrimp to serve over greens and grilled vegetables. Seems simple enough, right? In the meantime, here's what we have planned for this week:
Monday - Memorial Day Cookout with Friends, I'm bringing my Red, White & Blue Potato Salad
Tuesday - Band Banquet at the High School, Dinner Date with my youngest
Wednesday - Grilled Flank Steak, Baked Potatoes and Broccoli
Thursday - Chicken Cutlets, Butter Noodles with Parsley, Green Beans
Friday - Pizza Night - Homemade pizza, popcorn and a movie with the family
Saturday - Leftover Buffet/ YOYO (You're On Your Own)
Sunday -Burgers and Dogs on the grill, Pasta Salad and Watermelon
