Meal Planning 2016 - Week 31

Weekly Mea Plan - Real Food Ideas for Real Families.

Happy Monday Meal Planners! It looks like temperatures may be cooling down here in the Philadelphia suburbs this week. How has your summer weather been? We've been unseasonably hot, and I'm just about over it. Summer parenting can be challenging enough without the added heat and humidity making everyone (including mom) cranky.

We have three more weeks of summer camp left - it's been a blast for me and the kids. I've never worked in this type of environment and it's been a real learning experience for me and way more fun than I had anticipated. But with that said, adjusting my home and blogger life has been a bit of a challenge. For one thing, my weekly shopping trips to Trader Joe's are a thing of the past. I'm just too tired at night and who wants to go on the weekends?! Meal Planning has REALLY come in handy as it keeps me on track and lets me be a little more resourceful with what we have on hand.  

For instance, last week I did hit up Trader Joe's and I thought ahead and bought a few extra main course/meat items. I'm not planning to go this week, but I have a pork tenderloin in the freezer and we never had the shrimp from last week, so they are moving over as well. I always keep individually sealed boneless, skinless chicken breasts in the freezer. They cost a little more, but they are easy and you can defrost the perfect portion every time.

Here's what we have planned for dinner this week:

Monday - Chicken Cutlets with Tomato, Cucumber and Onion Salad
Tuesday - Grilled Pork Tenderloin, with Roasted Potatoes and Broccoli
Wednesday - Rigatoni with Meatballs
Thursday - Oven Roasted Shrimp, Rice and Zucchini
Friday - Homemade Pizza Night
Saturday - Date Night for mom and dad - kids are on their own
Sunday -Family Dinner Out
