Meal Planning - 2016 Week 26
Oh summer I love you. Even with a busier schedule and a disruption to my grocery shopping schedule, there is just something more relaxed and easy-going about summer meals. Not in the mood for what you planned? Throw together a yummy Charcuterie (fancy word for cheese plate) and dinner is served. The kids think it's fancy and love to pick and eat with their fingers. In a time crunch? pick up a rotisserie chicken on the way home. It works for easy wraps and salads and then you also have something for lunch the next day!
One issue that has come up is that I don't have as much meal prep time with working outside the home every day. I am trying to remember to take meat out of the freezer the night before to defrost in the refrigerator and do as much prep ahead as I can. We are also eating a little later than we do during the school year - I blame the longer daylight hours.
But no matter what your summer schedule, our families have to heat - right? So here's what we have planned for this week:
Monday - Grilled Chicken with a Caprese Salad and Bread
Tuesday - Grilled Flank Steak and Green Beans
Wednesday - Steamed Dumplings and Rice (may be switched in case of rain on another night)
Thursday - Pasta Primavera (trying this recipe this week)
Friday - Pizza Night - Homemade on the grill
Saturday - YOLO (You're On Your Own)/Leftovers
Sunday - Family Dinner Out since it's a Holiday Weekend
