Welcome back to another weekly meal planning post. I keep waiting for "normal" and a regular routine, but so far, it's just not happening. Fall is such a busy time of year, so Monday, I'm making TWO pans of lasagna and freezing one to have again in a six to eight weeks. I am not good at freezer meals and planning too far in advance, but this is one meal I've mastered making more than one batch.
Here's what we have planned for dinner this week:
Monday - Lasagna (I make 2 smaller pans (8x8) and freeze one), salad, bread
Tuesday - Grilled Pork Tenderloin, Baked Sweet Potatoes, Broccoli
Wednesday - Homemade Chicken Tenders for the kids and Chicken Caesar Salad Wraps for the adults
Thursday - Leftover Buffet
Friday - Pizza Night - Homemade
Saturday - YOYO (You're On Your Own)
Sunday - Family Dinner out for Ryan's Birthday
