It's finally Back-To-School time around here, and I was inspired to whip up a batch of my favorite Blueberry Muffins to celebrate. The real trick will be to see if there are any left for the First Day of School tomorrow!
I like these muffins because they are very simple to make, and I typically have all the ingredients on hand. You can mix up the batter in about 10 minutes, and they take about 25 minutes to cook. The trick will be saving some for breakfast the next day!
Ingredients
2 cups of flour
2 tsp baking powder
1/2 tsp salt
1 cup of vanilla yogurt (I used Stonyfield)
1 tsp baking soda
1 egg
1/2 vegetable oil
1/2 cup sugar
1 cup of fresh or frozen blueberries
Directions
Preheat oven to 350 F
Grease a 12-cup Muffin Tin and set aside
In a small bowl, combine the flour, baking powder and salt
In another small bowl mix the yogurt and the baking soda
In a large bowl, beat the egg
Add in sugar and oil and mix to combine
Alternately add the flour mixture and the yogurt mixture to your egg mixture, until blended
Fold in blueberries
Pour the batter into the muffin cups and bake for approximately 25 minutes
Cool muffins on a wire rack
Enjoy!
