Our school year is quickly coming to an end, but before it ends, we are getting slammed with a full calendar of sports, events and after-school activities. I must confess, I am looking forward to a more relaxed schedule and a a break in the organization of meal plans for summer vacation.
Yes - I still meal plan during the summer (remember, planning meals saves me money and my sanity) but I'm not trying to "fit in" decent meals between everything else. There's more time and less stress. As they say, during the summer - the livin is easy.
But it's not summer yet, and my family has to eat in between all the Lacrosse games, baseball games, band practices, concerts and school trips. So here's what we're planning for this week:
Monday - Grilled Chicken Caesar Salads
Tuesday - Pork Tenderloin (on the grill I hope), Asparagus, Pearl Onions and Parisian Carrots
Wednesday - Chicken Nuggets and Pasta
Thursday - Parmesan Crusted Talapia, Coucous and Salad
Friday - Pizza Night
Saturday and Sunday - TBD
