The key to making a great Mojito is the simple syrup. There are a ton of recipes on the internet for Mojitos, and I took time to sample a LOT of them - just to find the perfect combination for the most delicious Mojitos.
Ingredients
Water
Sugar
Limes (cut into 8 wedges)
Mint
Rum
Club Soda
First Step - Simple Syrup
Simple Syrup is no more than water and sugar. Heat 1 - 2 cups of water in a small pan. Add the same amount of sugar, stir to melt and bring to a boil. I used 1 cup of each. Allow the simple syrup to cool - it will be a bit thick. I store mine in the refrigerator in a glass jar.
Second Step - Muddle your Mint and Limes (recipe makes one drink - you can double it and make it in a shaker, or multiple glasses)
Place 10 Mint Leaves in the bottom of your glass and add a quarter lime wedge. Use a muddler or a spoon to "crush" the mint leaves and lime wedge, releasing the essence and juice.
Third Step - Add Simple Syrup and Limes
Add your simple syrup to taste. I used 3 Tablespoons per drink. Add 2 more lime wedges and muddle it again.
Fourth Step - Mix Your Drink
Fill your glass with ice. Pour approximately 1 1/2 oz of white Rum over the ice (adjust for your taste). Fill the glass with club soda.
Garnish with a sprig of Mint and enjoy!
