I finally feel as if I'm getting back on-track after February's winter storms. Spring is in the air, and my organization mojo is warming up as well. I find my biggest struggle with menu planning, is not feeling like cooking in the evenings. What do you think your biggest challenge is when it comes to menu planning?
Here's what's on our menu plan for this week:
Monday - Salmon, Brussel Sprouts and Couscous
Tuesday - Tortellini and Sausage
Wednesday - Pork Tenderloin with Brown Rice
Thursday - Quick Fix Dinner (Band Practice)
Friday - Pizza Night
Saturday and Sunday - TBD
