I love when a menu plan works out - last week's
Quinoa with Chicken & Roasted Broccoli and Salmon over Creamed Spinach were delicious and healthy too!
I ended up not making the Pork Tenderloin, so that's getting put back on the menu this week. Here's the plan for this week:
Monday - Rigatoni with Meatballs & Sauce, Salad
Tuesday - Pork Tenderloin with Roasted Butternut Squash
Wednesday -
Mini Meatloaves with Broccoli
Thursday -
Gingered Garlic Shrimp over linquine
Friday - Pizza Night
Saturday & Sunday - TBD
