Menu Plan Monday |
our menu planning is taking a big hit this week. . .between the beginning of Daylight Savings Time and Baseball Season. . .I am in a conundrum of what to make.
I am hoping to take some time this week and research some quick ideas to have on nights we have baseball practice or game. Also, planning to fire up the grill a lot this Spring and Summer.
Here is a tentative plan for this week. . .(if I firm it up any, I will make updates here):
Monday - Rigatoni with Sauce, Salad
Tuesday - Shrimp and Vegetables over brown rice
Wednesday - Chicken with potatoes and a vegetable
Thursday - Sausage and Brussels Sprouts
Friday - Take Out/Pizza Night
Saturday & Sunday - TBD

I'm still struggling with this after several years of sports. I do like to keep tortellini from Costco in the freezer. I was also thinking of doing lunch meat sandwiches, especially during weeknight practice nights.
