Welcome back for my weekly meal plan post! Spring is slowly arriving around here, but there's still plenty of snow on the ground. Some weeks a plan comes together so easily, it almost writes itself. But other weeks, it is a struggle to put something down for every night.
This was a struggle week for me, even with two break-nights built in. I consider a break-night: YOYO (Yo're on your own) Night and Leftover Buffet. Both nights allow everyone to choose from something we have on hand that doesn't need more than heating and assembly. I also tend to put my break-nights at the end of our weeks, as I just don't feel like dealing with dinner.
It's not a Pinterest-worthy dinner here every night. We are a real family, and we get tired and cranky just like you do. I run out of ideas, inspiration and gumption too. Heck, some nights, I just plain old don't feel like cooking. I do find having the weekly plan helps though.
So with all that said, here's what we have on our menu plan for this week (a little new, a little favorite, a little easy):
Monday - Spaghetti and Meatballs,
Tuesday - Sausage, Kale and Sweet Potato Soup
Wednesday - Dumplings, Fried Rice and Slaw
Thursday - Leftover Buffet
Friday - Pizza Night
Saturday - YOYO (Your On Your Own)
Sunday - Family dinner out
