BBQ Chicken Salad with Non-Buttermilk Ranch Dressing (Recipe)

We eat a lot of Yogurt around here. The kids enjoy it for breakfast and as a snack, my husband eats yogurt for breakfast and occasionally takes a cup to work with him, and I also enjoy it for breakfast or a mid-day snack.
But did you know you can cook with it? That you can substitute it for things like sour cream and buttermilk? Check out this yogurt substitution guide from Stonyfield:
This month, Stonyfield, along with Earthbound Farms challenged the Yo-Getters to create a recipe using Stonyfield Greek Yogurt and a fruit or vegetable from Earthbound Farm. I can be a little recipe-creation challenged. . .but with the substitution chart above, it gets a whole lot easier!
For my challenge, I purchased a container of Stonyfield Greek Yogurt and an Earthbound Farm Organic Half Spring Mix and Half Baby Spinach.
I decided to try out the substitution suggestions, and make Buttermilk Ranch Dressing - using Stonyfield Greek Yogurt instead of buttermilk.
Non-Buttermilk Ranch Dressing Ingredients
2/3 cup Stonyfield Greek Yogurt
1/3 cup milk
1/2 cup mayo
1 tsp lemon juice
1/8 tsp paprika
1/4 tsp mustard powder
1/4 dried dill
salt & pepper to taste
I mixed all the ingredients into a small bowl, then dumped it into a mason jar and shook.
Now you're ready to assemble your BBQ Chicken Salad with Non-Buttermilk Ranch Dressing.
Arrange your greens.
Drizzle some Non-Buttermilk Ranch Dressing on top.
Add some corn - I used leftover grilled corn.
Add some drained and rinsed Black Beans.
Add BBQ Chicken - I used some leftover BBQ Chicken I had in the fridge. You can also shred a rotisserie chicken, poach a chicken breast or whatever you prefer.
Feel free to add avocado and/or chopped tomatoes as well.
I drizzled a bit of BBQ sauce on the chicken as well.

ReplyDeleteUm yum. I had a salad today and yesterday and maybe even the day before that. I could live off salads but I have never thought to make a dressing for one with yogurt.
